This Mandatory Internship Report was presented to the Federal Institute of Santa Catarina - câmpus Canoinhas with the purpose of obtaining the title of Food Technologist, aiming to portray an arduous stage in the academic career, but with a wide acquisition and application of knowledge in the management of Food Analysis and Processing Laboratories. This work reports the activities carried out throughout the development of the internship, with the application of the theoretical and practical knowledge acquired during the Food Technology Course in the daily routine of a Laboratory Technician.

Tecnólogo en alimentos graduado por el Instituto Federal de Santa Catarina (IFSC) - câmpus Canoinhas (2017) y especialista en gestión de la seguridad alimentaria por el SENAC (2020). Actualmente es Técnica de Laboratorio del Eje de Producción de Alimentos en el IFSC - câmpus Canoinhas. Tiene experiencia en el área de Microbiología y Análisis Físico-Químico de Alimentos.
