This Mandatory Internship Report was presented to the Federal Institute of Santa Catarina - câmpus Canoinhas with the purpose of obtaining the title of Food Technologist, aiming to portray an arduous stage in the academic career, but with a wide acquisition and application of knowledge in the management of Food Analysis and Processing Laboratories. Tecnólogo en alimentos graduado por el Instituto Federal de Santa Catarina (IFSC) - câmpus Canoinhas (2017) y especialista en gestión de la seguridad alimentaria por el SENAC (2020). Actualmente es Técnica de Laboratorio del Eje de Producción de Alimentos en el IFSC - câmpus Canoinhas. Tiene experiencia en el área de Microbiología y Análisis Físico-Químico de Alimentos.
