Due to high demand in production required in the food processing industry, there is a need to develop a machine vision system which can perform the activity of human operator. This machine will be able to replace human vision perception in terms of inspecting and grading defective and healthy banana in food processing industry. This will save time, reduce the chances of hazard that human operator can be exposed as a result of the working environment. Also, a standard production will be encouraged due to the fact that machine vision will be designed in such a way to determine whether the banana is defective or healthy in the field of production. In this book, a comparative study on intelligent sorting system for banana has been suggested. The system is based on image processing and statistical texture feature extraction. This work is made up of two phases which are image processing phase, and the second phase is the classification phase.
