Characterizing the Alteration of Ovoproducts Using New Analytical Approaches focuses on the capabilities (potential or proven) of the latest metabolomics based analytical approaches for the (early) diagnostic of the alteration of ovoproducts during their production/preservation processes. Olivier GONÇALVES is assistant professor in the Laboratoire de Génie des Procédés since 2010 (Nantes University). He has passed is Ph.D. thesis in analytical chemistry at Nantes University (2000) and since then has occupied research positions as post-doc researcher at EMBL (2000 to 2003) and as assistant professor in the Laboratoire Genome Microorganisme et Environment (LMGE - UMR CNRS 6023) (Blaise Pascal University) (2003-2010).
