Betsy Freeman wrote this cookbook after finding herself frustrated by the complicated recipes typical of many plant-based cookbooks, which tend to be written by professional chefs for experienced cooks. A home cook and environmentalist, she aims to break down barriers to plant-based cooking, and make it easier and more accessible to all. Betsy grew up in Colorado and learned how to whip, blend, and sauté from her mother, who also passed along her love of vegetables. A professional illustrator as well as full-time product designer, she lives in San Francisco with her husband Josiah.
