The book "Sensory Evaluation and Proximate Analysis of Peach" shows the information based on experiment to increase the Shelf life and Nutritional Quality of Peach by using Gamma Radiation Cobalt-60. The book covers different topics from the production of Peaches Worldwide to Modern Processing Techniques that are employed in Peach Export. Moreover, Varieties of Peaches, Nutritional Facts, Experiments regarding sensory attributes and different parameters such as % of Weight loss, Moisture loss, Ash content, Crude fiber, Crude fat, Total soluble solids (TSS), Decay %, pH and Titratable acidity are discussed in detail. All the Results are supported by Figures and Tables. The experiment proved that 0.75 kGy is an effective dose for maximum shelf life extension of Peaches. It is expected that this technique increases the Peach export rate in a positive sense by overcoming the quarantine barriers.
