The use of dietary supplements has gain increasing interest in the Western World, Asians and indeed in Africa over the past decades. Dietary supplements, as the name implies is defines to mean any food products intended to supplement the diet, which in essence carries one or more dietary ingredients, including amino acids, vitamins, mineral, fibers, fatty acids, enzymes, herbs etc. Food substance use by man to supplement the diet by increasing the total dietary intake, its concentrates, metabolites, constituents, extracts, or combination of any ingredients is dietary supplement. Situations where the use of vitamin and mineral supplements can improve the health, and the consumption of conventional food as the preferred method to improving nutritional and health status are examined, along sides with the many issues confronting dietary supplements today. It is my earnest believes that this work will be very useful to students, food scientists, research institutions, the food industry and practitioners in the dairy sector.
