In this sense, sea salt for human consumption. It is an element of discussion and of extreme necessity for the proper functioning of the human organism. Refined sea salt, also known as common kitchen salt, consists of a mixture of some salts, such as: NaCl (sodium chloride) the main constituent, KIO3 (potassium iodate), responsible for the presence of iodine in salt. Salt is an important nutrient, not only because it is used worldwide in food preparation and conservation, but also because of its intrinsic chemical characteristics, and because it can be ingested regularly in small quantities, which makes it an ideal vehicle for the consumption of other essential micronutrients such as iodine. In Brazil, salt has been fortified with iodine, as determined by ANVISA through Resolution - RDC No 130 of May 26,2003, in order to avoid serious health disorders caused by the deficiency of this chemical element, so its quality evaluation is essential.

Graduation - Chemical Engineering and Food Engineering from UEMG (2000), Master in Food Science (Chemistry, Physical-Chemistry and Biochemistry) from UFLA (2003), PhD in Chemical Engineering (Eng. of Processes and Alternative Energy) from UFRN (2009). He is currently an Associate Professor at the Universidade Federal Rural do Semi-Árido - UFERSA.
