This study was conducted to evaluate the effect microencapsulated methods using sodium alginate, -carrageenan, skim milk and whey protein on the production of some important compounds (exopolysaccharides, acetaldehyde, diacetyl and vitamin B12) using microencapsulated probiotic strains. Also, the suitbale incubation period, temperature degree, pH value and growth medium for maximum production of important compounds with microencapsulated strains was studied.
