The meat industry falls under the agriculture sector and involves livestock production, processing, packing, preservation and marketing of meat and meat products. Meat trade is a highly regulated industry locally, regionally and globally with an aim to safeguard human health, offer wholesome meat to consumers and ensure fair trade. A cross sectional study to determine the level of compliance of various categories of slaughterhouses and processes plants to OSHA, 2007 and to establish the types of injuries experienced and the management of these injuries in these facilities was carried out in Nairobi City County. A total 347 respondents from 3 export, 3 category A local and 21 category C local slaughter houses were included in the study. This book will provide a practical guide for use in the establishment of slaughterhouses in Kenya, model for developing templates for risk assessment, evaluation for assessment of level of compliance to laws and regulations and safety of abattoir workers. Meat industry regulators, practitioners and students of veterinary sciences and occupational health and safety, will find this book very useful.
