Nirmala (Mala) Lange is a retired registered nurse who studied, licensed, and worked as a nurse in the UK, Canada, Arizona, California, and Hawaii. She was recognized and honored in 2006 by the State of Hawaii at Manoa School of Nursing as one of Hawaii's Outstanding Fabulous 50 Nurses. Mala is devoted to creating healthy recipes that has helped her husband, Leonard, to manage his kidney disease without dialysis for the past 10 years. She is also an accomplished artist, continuing to paint as time permits, and loves to sing and travel with her husband.
