This study evaluated how the drying of Alpinia leaves zerumbetinfluence on the properties of their extracted essential oils (OE's), also applying predictions of mathematical models for the drying phenomenon in the conditions performed. It was concluded that the drying temperature influences the physicochemical and biological properties of the EO's, and thus studies such as this one are necessary to evaluate the best mathematical model to predict drying as well as how temperatures influence the properties of the product obtained.
