The title of the book suggests that the present work is connected with the alpha amylase production from Bacillus species and use of this enzyme to hydrolysis the starch present in maize granule.Hence, to find out the most appropriate bacterial source for alpha amylase production three bacteria Bacillus subtilis, Bacillus licheniformis and Lactobacillus acidophilus were studied. During the present research work, growth profile, of these bacteria were observed and studied was also done on the production of alpha amylase to check their applicability to hydrolyze the starch present in maize.
