Given the fact that some of the mushrooms on our shelves, successfully replaced by their cheap food analogues, due to their ease of cultivation and precocity, an important role is given to the physical and chemical composition of nemko mushrooms, analogues opatite, as well as their appearance and consistency of the marinade. In this connection, the aspect of storage and processing of freshly picked mushrooms takes an initial position in the moment of storing mushrooms for future manufacturing of canned sterilized pickles and marinades. The publication is valuable because it describes not only the moments of storage and processing of the mass of mushrooms, but also issues of mechanical processing, bookmarks for picklingin jars.
