The aim of this book is to help the researchers to learn about the methods of extracting the biochemical polymer (Chitosan) from the shrimps by means of chemical methods, which has excellent physiochemical and functional properties represented by the high degree of deacetylation and high stability and other properties that emerged through the results of analysis such as FTIR and TG And XRD and SEM. It also includes the possibility of preparing different water-soluble derivatives of Chitosan recorded by Millard reactions by binding to different reducing sugars after it is impossible to dissolve the corresponding Chitosan with water and dissolve only in low acid solutions at pH less than 6. For the first time in the world, the derivatives were identified by GC-MSS. The results showed that they contained several Millard compounds and defined their chemical composition and molecular weight.

Dr. Alya Jameel Ali Al-Saad was born in 1963 and received a University degree from the college of Agriculture, University of Basrah, Iraq in 1986 and completed the Master in 2011 and then got a doctor in 2016.
