There are still some major challenges to get high production in blue mussels industry including the transportation from the processing units in Norway to the consumers in the European markets. Norway has a relatively long distance to the main market compared to European competitors. This means that to develop profits, the Norwegian blue mussel industry needs to seek solutions for extending shelf life and improving quality of mussels during transportation. This book is to find out the variable of quality and viability as well as the susceptibility of blue mussels to environmental stress change in the course of dry storage. Some end-point parameters as filtering capacity, water leakage and ammonia excretion were investigated in order to detect these possible effects of shaking stress after aerial exposed on truck transport to the markets.
