Besides their technological properties in food production, LAB can confer beneficial properties to their hosts, as probiotics. Beyond being probiotic, certain strains of LAB are able to produce specific beneficial compounds in foods such as vitamins, low calorie sweeteners, antioxidants, polysaccharides and minerals.
