The stability of the flows leading to tip streaming is analyzed theoretically and experimentally. Attention is paid to the effects of surfactant monolayers and viscoelasticity, including solutocapillarity, interfacial elasticity, surface viscosity, and extensional thickening caused by the polymer coil-stretch transition.
