Issues and options for India and rest of the world with respect to veterinary science, animal health and livestock improvement are dealt in detail. The plans and projects related to intensive cattle development in India have been reflected briefly, analyzing various schemes and evaluation processes in detail. An introductory overview of global dairy science and technology has been provided for the readers. An in-depth analysis of dairy farming, cattle types and milking has been done with focus on dairy products, biosynthesis, grading and defects. An analysis of dairy microbiology, starter cultures, inhibitors and anti microbial proteins has been undertaken in detail. Other issues which have been discussed at great length include dairy plant maintenance with focus on training, servicing, equipment and operations management.
