Aminopeptidase are commonly use for industrial process and food processing. Lactic acid bacteria are known for producing such enzyme. The screening for different aminopeptidases like arginine, glycine, leucine, proline, methionine, valine and arginine-proline dipeptidases on lactic acid bacteria has been done. The screening for different aminopeptidases like arginine, glycine, leucine, proline, methionine, valine and arginine-proline dipeptidases on lactic acid bacteria has been done. The screening for both extracellular and intracellular activity assay were proceed on these cultures and out of that 9 known culture, Lactobacillus halotolerans, Lactobacillus casei, Lactobacillus pentosus, Bacillus buchneri, Lactobacillus plantarum, Lactobacillus brevis, Streptococcus faecium, Lactobacillus delbruckii, and Enterococcus foecalis and 4 isolates MC1, W3, CB1 and SG2 from different sources shown positive results for these aminopeptidases. Screening shown that extracellular aminopeptidase activity is too low to be interesting but, that some strains have a good intracellular activity. For strains have been selected for a comparative study and finally, known culture L.brevis has been chosen for study of arginine aminopeptidase production.
