Fermented milks are sources of bioactive peptides that modulate intestinal functions. Hydrolysates fermented by: Lactobacillus paracasei, Enterococcus faecalis, Enterococcus faecium, Bifidobacterium longum, Lactobacillus plantarum and Sstreptococcus thermophillus were studied by electrophoresis and chromatography.
