At this critical juncture, it will be imperative to give agriculture a commercial orientation by linking it with food processing industries for better returns and job opportunities. In recent times the demand for potato and its processed products has increased because of rising income level of people and fast urbanization thereby generating immense scope in cultivation of processable potato crop in Punjab as most of the processing plants are also located in and around Punjab and Delhi. The present book is an effort to promote cultivation of processable potato in Punjab by screening of different low temperature tolerant Indian and exotic cultivars of potato, in order to identify best agronomic practices and make available the high dry matter and low reducing sugar potatoes to processing industry even under severe winters, against the general belief, at affordable price throughout the year.
