The process by which chlorophyll is converted into chlorophyllin consists of replacing the magnesium ion at the core of the chlorophyll molecule with a copper ion, and removing the phytol tail. The loss of the phytol tail makes the resulting chlorophyllin soluble in water as it allows far greater absorption within the body of organism.
