Rice is a very important commodity in Indonesia and is a food ingredient that is consumed by more than half of the world's human population. In the process of milling rice into milled rice obtained by-products in the form of: bran/bran (8-12%) which is the husk, produced from the grinding process is part of the crushed rice, which is a very potential amount to be utilized more optimally. Until now, most of the use of rice bran as animal feed, even though bran has very good nutritional content. Rice bran contains vitamins (vitamin B complex and vitamin E), protein, fat, minerals (calcium, magnesium, phosphorus, niacin), oryzanol and some of them are antioxidants that can inhibit the oxidation process which can ultimately help reduce the risk of various degenerative diseases. Degenerative disease is an implication due to oxidative stress caused by the accumulation of free radicals in body tissues. Antioxidant compounds have a very important role in health. The content of bran has activity as an antioxidant, so that the bran has the potential to reduce the risk of degenerative diseases.
