Fruit juices are important sources of nutrients and contain several important therapeutic properties that may reduce the risk of various diseases. They contain large amounts of antioxidants, vitamins C and E, and possess pleasant taste and aroma. Juices produced from tropical fruits have increasingly gained global importance due to their health benefits. Even though fruit juices are most popular, jamun juice and juice based beverages have not yet become popular mainly because of non-availability of suitable processing techniques and processing facilities. Hence, there is a need to develop a low cost technology for preparation and preservation of jamun juice and its beverages, due to its high nutritional and therapeutic values. In view of the many medicinal and therapeutic properties of jamun fruit and because of its short availability period, an attempt has been made in this study to preserve jamun juice and to prepare value added products and also to study blending properties ofjamun juice with guava and pomegranate juices in order to increase the nutraceutical properties of juices.

Durgam Sridhar, he received his undergraduate degree in Horticulture and M. Sc. (Hort.) in Fruit Science from Dr. YSRHU, Andhra Pradesh, India. At, present he is pursuing his Ph. D (Hort.) in Fruit Science at BCKV, West Bengal, India. His current research focusing on genetic diversity in mango germplasm.
