Few mathematical models have been found in the literature. In this study, a mathematical model has been developed to study and model the rendering process of offal in a rendering plant of Silver Fern Farms at Waitane. The model is capable of describing the dynamic process of the cooker and to determine the steam flow rate required for the rendering process. Numerical results have been obtained using the model, which are in agreement with the operational data of the offal cookers. During the study, it is found that convective heat transfer between the process steam and the contents in both water-continuous phase and tallow-continuous phase.
